Tom Yum
Hot and sour soup with lemongrass, galangal and lime.
Tom yum comes from central Thailand, where hot and sour soups of fresh herbs and river shrimp have long been everyday food. The creamy style, enriched with evaporated milk and roasted chili paste, is a newer restaurant style that is now just as common as the clear version.
Share one bowl for the table and spoon it over steamed rice, or sip it between bites of other dishes. The lemongrass, galangal and lime leaves are for flavor only, so push them aside instead of eating them.
